Nordic Energy Bars (1st)

4 C. fresh rolled oats (3 C. quick & 1 C. rolled)
3/4 C. organic sunflower seeds
1/2 C. fresh ground flax seed
1/2 C. wheat germ
or oat bran
1 C. ground almonds
1 C. ground craisins, dates, apricots or figs
1/2 tsp. salt
1-2 T. chia seeds
1/4 C. butter, melted
3/4 C. honey
3/4 C. maple syrup
1/2 C. brown sugar
1/2 C. organic peanut butter
1/2 C. organic almond butter
1 T. vanilla
Prepare lightly buttered 15” by 11” pan. Melt butter. Mix in brown sugar, maple syrup, honey, peanut butter, and almond butter. When cooled add vanilla. Combine 1st 8 ingredients in large bowl. Almonds and fruit can be ground in blender until fine. Pour liquid mixture over dry ingredients and mix well. Mixture should hold together. If needed add additional maple syrup. Spread in pan and cover with plastic wrap. Firmly press in bottom of pan forming a level surface. Refrigerate and cut into bars. Preparation time about 15 minutes.
Maple - Date Energy Bars (2nd)

Gluten free - vegan - peanut free
1/2 c. buckwheat flour
1/2 c. brown rice flour
1/2 tsp xantham gum
1/2 tsp salt
dash ground cloves
3/4 c. lite organic coconut milk
1/4 c. organic almond butter
1/2 c. maple syrup
2 c. chopped dates
1/2 c. toasted organic coconut flake
2 T. chia seeds
Sift together flour, xantham gum, salt & cloves. Blend milk, butter, & syrup. Combine dry & wet ingredients. Stir in dates, coconut, seeds. Spread in a greased jelly roll pan - will fill 2/3 of the pan. Bake 375 degrees for 20 minutes, or until golden and set.
Fruit and Nut Energy Bars (3rd)

4 C old fashioned rolled oats
1 C all purpose flour
1 C whole wheat pastry flour
1 C raw wheat germ
2 tsp baking soda
1 tsp sea salt
2 ½ tsp cinnamon
1 ½ C brown sugar, packed
1 C olive oil
1 C honey
3 eggs
4 tsp vanilla extract
½ C raisins
1 C dried cranberries
½ C dried apples, chopped finely
1 C walnuts, chopped
3 C corn flakes
Preheat oven to 325 degrees. Line one 11 x 16 sheet pan with parchment that has been sprayed with cooking oil spray. In a large bowl combine first 7 ingredients. Make a well in the center. In a separate bowl combine brown sugar, olive oil, honey, eggs, and vanilla. Whisk until smooth. Add the wet ingredients to the dry and mix by hand. Add the fruit, nuts and corn flakes, mix until evenly distributed. Press the mixture into the prepared pan. Bake at 325 degrees for 25-30 minutes or until the edges are lightly browned. Cool completely in the pan on a wire rack. Then invert the pan on to a cutting board and cut into bars.
